Kate & Shelby





Before Kate arrived... Mike & I both worried about how Shelby would handle a new baby in the house. He is such a good puppy...but, very excitable! He has surprised us! He hasn't quite figured Kate out... but is very protective of her when she cries he comes running! The only problem we have had so far is he thinks Katie's bouncy seat is his new bed!!!!!!!!!!!!!!!!!!! UGH! So we just have to be sure not to leave that around!

Corn Chowder

Corn Chowder
INGREDIENTS:
1/2 cup diced bacon
4 medium potatoes, chopped
1/2 medium onion, chopped
2 cups water
2 1/2 to 3 cups cups cream-style corn, 2 (12 ounces each) cans
2 teaspoons salt
pepper to taste
2 cups half-and-half or light cream, scalded

PREPARATION:
Sauté bacon until browned and crisp; add chopped potatoes and onions. Add water, corn, and seasonings; cover and simmer for 15 to 20 minutes. Stir in half-and-half; heat through but do not boil.

This is what we had for dinner... Sooo yummy! A real comfort food!

Cardic Appointment

We just got back from Children's... All three of us! Its a good thing when Kate comes back home with us. I'm not going to lie I was a little nervous this morning. Kate is doing fantastic! Dr. Marx says that this little girl keeps amazing him, and he is thrilled with how well she is doing! She was a trooper for her echocardiogram : ) Slept through most of it : ) She is now weighing in at 5lbs 11 oz. (I'm sticking to Children's scale... I don't think the one at my peds office is accurate) We go back on Feb. 14th Valentine's Day!

Katie's 1st Bath!

Tonight, we gave Kate her 1st bath in her tub! Up until now we have been giving her sponge baths! I was afraid she would scream and cry...She didn't she LOVED it! She was so content! I of course was the worried mom...thinking the water was too hot. Even though her rubber ducky (which doubles as a thermoter) said it was just right, as did her daddy! There is nothing as sweet as the smell of a just bathed baby!!!

Ranch Pasta!

Yummy!!!

16oz pasta ( I used Bowties)
1 Stick of Butter
1 Pkg. Dry Ranch Dressing
1/2 C. Frozen Peas
2 Chicken Breast cooked and cubed

After cooking pasta, move to a bowl. In a pot melt the butter and mix in Ranch mix. Stir in frozen peas and stir until melted. Mix in chicken and cooked pasta. Combine until butter covers pasta well.

Scrapbook Page!




Well, if you know me you know my favorite hobby and the only one I have really stuck with is Scrap booking! I love all aspects of it...the craftiness, the paper, the PICTURES & the STORIES! Now that Kate is here it is more important then ever that I scrapbook for her. ( at least now I know I have someone to leave them to ; ) ) Anyway, as with everything else life gets in the way and I haven't had time to scrap. I knew with a new baby it would be harder then ever. So for 2008 I vowed to do 1-3 layouts a week! The scrap booking board I frequent, is helping me do that by posting weekly challenges using different sketches and layouts. I'm already behind its week three of the challenge and I am just starting. It just means before Sunday I have to do at least 2 more layouts ideally I would like to do 6 more! So here is my 1st challenge layout. In honor of my pseudo niece Merrie! ( She was the reason I scrapped before I had Kate... I have sooo many pictures of her in my books I thought I would just leave her my albums... I still may leave her some!)

What a great invention!!!! Kate loves to be held and cuddled... and lets face it I love to hug and cuddle her! But, it makes getting anything else done rather impossible. Well Mike brought out the Baby Bjorn and lets just say Mommy and baby are in love! She is soo content and I am so comfortable. It allows me to cuddle my lovey and still check email, blog, scrapbook and even fold laundry...LOL ok I probably won't fold laundry. : )

The Best Dip EVER!

Buffalo Chicken Dip

INGREDIENTS:
8 oz. pkg. cream cheese
1 cup blue cheese salad dressing
1/2 cup Frank's REDHOT Buffalo Wing Sauce
1 cup crumbled blue cheese
1 cup shredded Sharp Cheddar cheese
2 cups finely chopped cooked chicken ( I use Perdue Short Cuts)

DIRECTIONS:
HEAT oven to 350°F. Place cream cheese into deep dish 9-inch pie plate.
Microwave 1 min. to soften. Whisk in salad dressing, Buffalo Wing Sauce and blue cheese until smooth. Stir in chicken. BAKE 20 min. or until mixture is heated through. Cover with shredded cheddar cheese. Bake 5 mins or until cheese is melted. Serve with Trisuts or tortilla chips.

I orginally got this recipe from my friend Beth on Scrapshare. I didn't like it with the canned shredded chicken, so I tweaked it a bit and now I can't get enough!

We just had it tonight! YUMMY!

Trying again...

Well I tried this back in April... that was before I got pregnant and my life got CRAZY!!! So now I have a whole new reason to blog. I'm sure our family and friends care much more what's going on with our sweet baby girl then just me & Mike anyway! So I have a great insentive to keep up on this. Again it's too much info to go back and fill you in on all that stuff that has happend! If you are reading this you probably know all that already. I may fill in some of the back stuff if our life ever gets boring and I need something to write!
